Make The Perfect Crepe

Ever wonder how The Crepe Man does it ? Then wonder no more. We’ve got all the best tips and ingredient ideas so you too can enjoy the taste of our legendary crepes at home.

Simple Sweet Crepe.

mix 1 cup plain flour

2 eggs

1 cup milk

1/4 tsp sugar

2 tbl melted butter.

Combine flour and sugar in a bowl and whisk in milk and butter at the end. Make sure all the lumps are gone and it should be the consistency of pouring cream. Heat a non stick pan to medium heat and pour in a little of the batter turning the pan to coat the base in a thin layer. If any left over pour back into bowl. Cook for 1 minute or until small bubbles appear and turn over and cook other side till golden brown. about 1 minute. add required toppings and fold in half then half again and tip out onto plate and eat asap.

A savory version can be made by adding salt and a blend of flours like soya, buckwheat or wholemeal. The quantity of milk will vary based on the flours used so gauge it to the consistency of pouring cream. different flours give different textures so experiment and use a blend. I use 3 different crepe mixes in my stall from sweet, savoury and coeliac. They each have a minimum of 3 different flours.

The fillings for crepes are infinite. There are no rules to what goes in them but take note that fillings that are runny can result in burns due to them running and also a soggy crepe. Always put liquids ( lemon, maple, honey etc ) on the crepe just before serving.
